They kept the turbines
When the Calcasieu Light & Power station shut down in 1987 the city planned to level it. Camille's grandfather worked the boiler room for 31 years, so when the building came up for auction in 2014 she bought it with a restaurant loan and a lot of nerve. The two remaining turbines were too expensive to remove, so they became the dining room.
The fire came first, the menu second
Theo built the 14-foot live-fire hearth before there was a single table in the room. Everything on the menu still passes over oak and pecan — even the ice cream base gets smoked. There is no fryer in the building, which in southwest Louisiana is close to heresy.
A restaurant that hires the neighborhood
Twenty-two of the twenty-six staff live within two miles. The Filament Room pays a flat living wage with no tip credit, publishes its pay bands on a chalkboard by the kitchen door, and closes for the whole week of the shrimp season opener so the staff can go work their family boats.
